Danielle's Lil Bucks Falafels

Danielle of @cacaoforcoconuts_ has done it again! Her recipe is pure culinary genius, combining sprouted buckwheat with garbanzo beans to create simple yet mouthwatering dish. I’m drooling just thinking about it!

30 minutes and BOOM! The perfect crunchy falafels are ready to use in your salads, serve with hummus, or eat in a wrap. This recipe alone had me ordering an air fryer to try ASAP.

Once you’ve rinsed and laid your garbanzo beans to dry out, it’s time get out the food processor! Place the bunches of cilantro and parsley in a food processor. And put until chopped. In the food processor, dd in garbanzo beans, spices, onion, lemon juice and tahini. Blend until well incorporated. Next, gradually add in the garbanzo bean flour so the mixture sticks together into a runny “dough”.

Once you’ve formed lil balls with your hands it’s time to add the best part- Lil Bucks! Pour Lil Bucks onto a plate or into a bowl so you can roll each falafel ball in them. Then Air fry on 350° for 15 minutes, flipping halfway through and ensuring the Lil Bucks don’t burn. The falafels are done when the Lil Bucks start to look toasty!
